
1kg bananas (about 7), peeled
and sliced
5 tablespoons lemon juice
1 cup sugar
1 cinnamon stick
Place bananas and lemon in a
microwave proof bowl and mix to
combine. Microwave for 8 minutes on high or until bananas
are soft, stirring twice during cooking. Gradually add
sugar and stir until dissolved. Add cinnamon stick and
microwave on high for 20 minutes, or until jam has jelled,
stirring three times during cooking time. To test when jam
has jelled, place a teaspoon of mixture onto a chilled
plate. If jelled, the jam will wrinkle when pushed with
your finger.
