
4 chicken breast fillets, sliced
2 teaspoons sesame oil
3 tablespoons soy sauce
1 tablespoon brown sugar
Chilli Banana Salsa:
3 bananas, chopped,
2 red chillies, chopped,
2 tablespoons lime juice,
1 tablespoon chopped mint,
2 tablespoons coriander leaves,
2 tablespoons brown sugar
Place chicken, sesame oil, soy and sugar in bowl and
allow to marinate in the refrigerator for 30 minutes.
Thread chicken onto wet or oiled bamboo skewers and
set aside. To make salsa:Place banana, chilli, lime juice,
mint, coriander and sugar in a bowl and toss lightly to
combine. Grill, barbecue or pan fry chicken until tender,
brushing frequently with marinade. Serve chicken with
banana salsa. Serves 4.
