Banana Pecan Bread

2 1/2 cups plain flour
2 teaspoons baking powder
1/2 cup caster sugar
1 1/2 cups dessicated coconut
1/2 cup chopped pecan plus
1/2 cup whole for decoration
3 bananas, 2 chopped
into chunks, the third
sliced for decoration
2 eggs, lightly beaten
300ml milk
60g butter, melted

Preheat oven to 180 C. Grease a 21cm by 11cm loaf tin.
Combine sifted flour and baking powder in a large
bowl. Add caster sugar, coconut and pecans and stir to
combine. Combine remaining ingredients in a bowl
and fold into dry ingredients a little at a time until
mixture is smooth. Pour into prepared tin and decorate
the top with sliced banana and whole pecans. Bake one
hour and 15 minutes, until a skewer inserted in the
centre comes out clean. Allow to cool in tin 10 minutes
before turning onto a wire rack to cool completely.
Serve with butter or toasted with butter and honey.
