
(1 cup capacity ramekins)
250g cream cheese
1/2 cup cream
1/4 cup honey
3 bananas, mashed, about 1
cup
1/4 cup lime juice
1 tablespoon gelatine dissolved
in 1/4 cup boiling water
2 egg whites, whipped until
soft peaks form
lime zest to decorate
Combine cream cheese, cream, honey, bananas and lime
juice in a food processor and process until smooth.
With motor running, add gelatine and process to com-bine.
Fold 1/3 of the mixture into the egg whites.
Repeat with remaining mixture. Pour into ramekins
and refrigerate overnight or until set. Serve decorated
with lime zest if desired.
