Banana Fritters

These fritters can be served as a snack in between meals or as a delicious dessert.

4 bananas, peeled and sliced diagonally
1 cup plain flour
1 tablespoon sugar
1 teaspoon nutmeg
1/2 cup water
2 tablespoons lemon juice
grated rind from 1 lemon
1 egg, separated
oil for deep frying
icing sugar

1. Sift flour, sugar and nutmeg into a bowl. Make a well in
the centre and add combined water, lemon juice, rind and
egg yolk. Mix well until smooth. 2. Beat egg white until soft
peaks form and fold into batter. Drop banana pieces into
batter. 3. Heat oil. Allow excess batter to drop from banana.
Drop banana into hot oil, cook until crisp and golden brown.
Drain on kitchen paper. 4. To serve, dust with icing sugar
and serve with ice-cream or cream.
