
1 cup sugar
1/2 cup water
200ml cream
1 prebaked tart shell
homemade or
store bought
4-5 bananas, sliced
3/4 cup shredded coconut,
toasted
Combine sugar and water in a medium sized saucepan
and stir over low heat until sugar is dissolved. Bring to
the boil and boil until golden. Remove from the heat
and stir in cream using a wooden spoon. The mixture
will rise and bubble so work carefully, holding the end
of the spoon. Stir until combined and set aside to cool.
Spread half the cooled caramel into the tart shell, dec-orate
with banana slices and drizzle with remaining
caramel. Srinkle with coconut and serve with whipped
cream or ice cream.
