Banana blueberry cake

1 cup mashed banana (around 3
small or 2 large bananas)
125g butter
1 teaspoon vanilla essence
1 cup castor sugar
2 eggs, lightly beaten
1/2 cup blueberries
1/3 cup sour cream or thick yoghurt
2 cups self raising flour

Place butter, vanilla and sugar in a bowl and beat
until light and creamy. Add eggs and beat well. Fold
through flour, sour cream, banana and finally blueberries.
Spoon mixture into a greased 22cm round cake tin and
bake in a preheated 180ºC oven for 1 hour and 10
minutes (or until cooked when tested with a skewer).
Allow to cool in tin before turning out to serve.
