Banana Bread Pudding

5 medium, firm ripe
bananas, sliced
4 cups raisin bread cubes
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon vanilla
1 3/4 cups skim milk
2 eggs, beaten
1/2 cup firmly packed
brown sugar

Heat oven to 180°C. Grease a
10 x 6 inch baking dish. Place
2 cups bread cubes in greased dish; top with
banana slices and remaining bread cubes. In medium
bowl, combine brown sugar, cinnamon, nutmeg, vanilla,
milk and eggs; blend well. Pour over bread cubes. With
back of spoon, press bread cubes down slightly. Let stand
10 minutes. Bake 45 to 50 minutes or until centre is set.
Store any remaining pudding in refrigerator.
Suggestion: serve with reduced fat ice cream or yoghurt.
Serves 8.
